Hi All,

My older daughter came home from college for a couple of days so we pulled the chops out for tonight. These were over a pound each! I saw them at the store and could not resist.

So I started by brining them for a couple of hours for tenderness

Then on the grill with some Weber spices plus oregano. Smoked off fire with hickory and apple for over an hour

Then on direct for a sear on all sides

Chops off to the side getting to a final temperature of 150 while grilling some asparagus

Finally plated with my wife's signature mashed potatoes

Incredibly tender and delicious!

Holy Porkchops, Batman! Those are huge! And they look fantasti, I might add. Great meal!
 
Those chops looked thick enough to stuff!! I had stuffed chops once, and still dream about having them again someday..
