Chilaquiles en el Weber...Maribel style

Today my wife Maribel made dinner...Chilaquiles. Nothing fancy about this dish. Most mexican dishes have some sort of corn tortilla, meat, onion,tomatoe, jalapeno peppers.

So she grilled 10 serrano peppers, 3 tomatillos, 1 tomatoe.


Then you blend with 1/4 onion, 1/4 bunch of cilantro, 3 garlic cloves.


Put oil to cover bottom and added sauce until it boils.


add your tortilla chips or make your own.




add the cheese


then cover for 10 minutes


we also did some beans.


plated and ready to eat. added some mexican crema and chopped onion on top.

 
One of my all time fav's Tony i would of ate that all up... Love it for breakfast Chilaquiles on the bottom 3 egg's over easy on top more Chilaquiles on top little Queso Fresco & Creama and i'am done. Thank's for posting that up Tony.

We do that also for breakfast. And if we have a hangover we do them extra spicy with a corona on the side.
 
Looks awesome Tony...I have never had that one (except those very same Cardenas chips...had lots of them)!

I will have to try that one!!
 
Man that's a great looking plate of food! The wife looks like she can give you a run for you $ :) my wife and I love this style of cuisine. Who doen't like beans right? Thanks for sharing Toni!
 
Tony & Maribel, i've had this so many times with chicken and/or eggs and refried beans... it's DELICIOUS!

I remember the cook calling the chips something other than tortillas... it's been years... totapols?
I need to make this... I'll try it before posting JUST in case it's a flop:D
