Chicken Quarters Inspired by the Master

I was looking at a post from Jim Lampe a week or so ago. It was one of the ones where he puts a week's worth of cooks in one post. In the middle of the post he had these chickens he had split in two and grilled. The color he achieved was so beautiful and looked so tantalizing I knew I had to give it a shot. Today I found chicken quarters for 98 cents a pound so I wanted to give it a try. So here we go.

Seasoned the chicken with Johnnie's Seasoned Salt, pepper, paprika, garlic powder and onion powder. It was an old sports page that I dusted them on so I'm sure the recent dominance of the Brewers over my Dodgers was the story...

Set up the grill for a good 2 1/2 hour cook. Desired temp in the 275-300 range.

Flipped the chicken over after about an hour.

Cut up some yukons and fried them in a CI skillet on the other grill.

Kim melted some butter and minced garlic and seasonings and I brushed it on the chicken.

Heated a really nice loaf of bread on the dying coals. About 12 minutes to heat through.

Plated with a great salad Kim made up with huckleberry dressing, red onion, strawberries, slivered almonds.

I didn't quite get the beautiful color Jim got on his chicken but everything turned out really tasty and the kids loved it.

I like on the "other" grill, my wife doesn't understand why I need so many, but never complains about the meals.
