Chicken Mole

Grilled some chicken thighs indirect before the next rain storm is suppose to hit.


Removed the skins and then simmered the thighs in mole sauce till they were fork tender.


Served the thighs over a bed of rice and pinto beans and ladled the sauce over everything

There's few things that get my attention (food-wise) like Chix thighs in a good Mole sauce. Yours looks great
