Chicken Enchiladas

Used some smoked Chicken quarters I smoked earlier in the day.

Chopped up some of the chicken and added a 28 oz can of Las Palmas red enchilada sauce.


Dipped some corn tortillas in the sauce added some of the chicken inside the tortilla and placed in a pan. Once the pan was full I dumped what was left over the tortillas and placed the pan covered with aluminum foil on the WSM to let everything warm through.

Once warm I took the aluminum foil off


and added cheese. Took the pan off when the cheese was nice and melted.


Some refried beans


Plated. Added some sour cream, lettuce, tomato and Sriracha sauce to the enchiladas.
 
Dustin took the words right out of my mouth. They look delicious. Nice job. I cooked a turkey breast last weekend. I might try this recipe with turkey.
 
They turned out really good. They would have been better if I fried the tortillas in oil first, but I didn't feel like it and didn't want to add the extra calories too.
 
I've never cooked enhiladas. Do roll them up and then fry them?

If I'm not gonna fry them I just dip them, add the chicken and then roll them. You gotta be fast though, the tortillas will start falling apart really fast if you fool around with them too much.

Flour tortillas hold together a lot better than corn..... I like to switch it up though (haven't fried either kind).
 
Looks great John! If you have any leftovers try a couple of eggs and salsa over the enchiladas for breakfast good stuff.
 
Tasty looking enchiladas! Love using leftover smoked chicken or pulled pork for enchiladas. Add some hatch chiles, oh yeah!
