Chicken en Mole and Scrambled Egg Taco

After looking at the ingredients, I knew I had to give it a try.

Cooked a chicken.

The concentrated mole.

Thinned it with 28 oz chicken stock over medium/low heat.

Shredded the chicken and added it to the mole.

It's been real delicious. Made several dinners/lunches with it served over white rice. Lots of leftovers.

Makes a great breakfast taco.

Fantastic cook, Robert! Love mole, but don't think of it often. Maybe I should. There's a lot to be said for shopping the local ethnic markets for authentic ingredients and flavors. I can only imagine how it tastes simply by the mouth-watering pics!!
 
My goodness that's a terrific looking cook. Bet that mole was superb also. I was telling my wife about your scrambled egg tacos. Sounds good.
