Cheap Chicken

Got these drums for 98 cents a LBS

Put them in a 1/2 cup salt + 1/2 cup sugar brine with a teaspoon of cayenne for about 30 hours, rinsed them real good and then put them in a bowl of Frank's Red Hot Wings Buffalo sauce (added 1/2 cup olive oil a tablespoon of Soy & Worcestershire sauce) for about 10 hours, and then right on the pitt from the bowl

It was real good although I think I should have skipped putting the rub on when I put the chicken on the grill, the rub I made didn't compliment the Frank's and Frank's is the bomb (imho)

If you cook the franks sauce after the soak, will that not "sterilize" it and allow it to be used as a dip sauce?
 
I don't think I would do that, Franks is cheap, I would just open a new bottle and discard the sauce that the raw chicken was in. Yeah, this cook was a tad crispy, LOL

Love Sanderson's Farm chicken and that cook was great, it's the only way we cook chicken anymore is on the WSM sans water bowl. Good stuff!
