I saw Robert's Carnitas post last week and had to give it a try. Problem was, I was too busy with my spring work. Then, we had a pretty rainy two days last weekend so I got my shot.
I dropped down in size to an 8 lb. Butt.
I followed this portion of Robert's post exactly so I won't be redundant with ingredients.
I didn't want to completely copy Robert's cook so went in a little different direction at this point. Started off in my 14 inch Camp Dutch Oven.
Kept the DO right around 350. This was around the 4 hour mark.
Roast was done right around 5 1/2 hours. Bone slid right out.
At this point I switched to my 16 in CDO as it would give me a little more surface area for the sear.
Pulled the roast.
Cranked up the heat on top.
