Carnitas Burritos

I saw Robert's Carnitas post last week and had to give it a try. Problem was, I was too busy with my spring work. Then, we had a pretty rainy two days last weekend so I got my shot.

I dropped down in size to an 8 lb. Butt.

I followed this portion of Robert's post exactly so I won't be redundant with ingredients.

I didn't want to completely copy Robert's cook so went in a little different direction at this point. Started off in my 14 inch Camp Dutch Oven.

Kept the DO right around 350. This was around the 4 hour mark.

Roast was done right around 5 1/2 hours. Bone slid right out.

At this point I switched to my 16 in CDO as it would give me a little more surface area for the sear.

Pulled the roast.

Cranked up the heat on top.

Jump to yesterday after 3 more days of work. Tony's rice for the burritos.

Finally, my burrito sauce.

Wrapped it up.

Crema Mexicana, the pork, rice, black beans and a little salsa.

Thank you for this wonderful recipe Robert. I see why it's one of your family favorites. Now it's one of ours. Wonderful flavor, perfect heat as well. We'll be having this again very soon. Thanks for looking everyone.
 
That burrito and plate look fantastic. And an outstanding creative cook. As usual, you've kicked things up 10 notches or more.

Adam.... Here's the recipe for the Burrito Sauce I used.

BURRITO SAUCE
""
INGREDIENTS
o 2 tablespoons butter
o 1 onion, chopped
o 2 tablespoons flour
o 1 cup chicken broth
o 1 cup tomato sauce
o 1/2 teaspoon garlic salt
o 2 tablespoons chopped green chili peppers (I used one huge jalapeno, with seeds)
DIRECTIONS
1. In a skillet, heat butter and saute onion.
2. Blend in flour.
3. Gradually add broth, stirring to keep smooth.
4. Add tomato sauce, garlic salt and chili.
5. Cover and simmer 20 minutes.
6. Spoon over your favorite burrito.
 
That's the best looking burrito I've seen in a long, long time. Great job!
