Last night the wife suggested we have Carne Asada Tacos. This is actually one of my favorite meals because it is SO easy and fast. So on my way home from work I stopped by the local carneceria and picked up a couple of pounds of Arrachera. My carneceria will pour some of their house made marinade into the bag with my meat for free. I don't know what it is made of but it is definitely some sort of a citrus marinade and it's really good!
Fired up the performer with about half a chimney charcoal put the CI grates in and spread out the meat.
Once the meat was done (it only take a few minutes cause it's so thin) I heated up the flour tortillas.
Assembled it with some fresh avocado, queso fresco, cilantro, lime, and of course Chile Valentina. Plated it with some steamed cauliflower. Between me and you, I didn't eat the cauliflower.....I instead ate 6 tacos, don't judge!
