I've been on a bit of a meatball sub kick lately, had four of them over the last week & a half. I knocked off of work early today & I rolled my own!
I've seen John Solak make them up but I used the first recipe I googled that looked good.....

I did a triple batch...roughly 3# of ground chuck. I put the scale on metric & figured 12 meatballs per pound...divided the total by 36 & got 50 grams per meatball.
I minced 2 jalapenos & put them in the meatballs.
at 10 minutes (halfway point) before turning:
I was out of basil & oregano...had a little oregano, but these canned tomatoes came with some basil in there. I used a touch of herbs de provence, salt, pepper, and a little oregano. This is the same brand as I use for my pizza sauce but I usually get the crushed tomatoes, not whole.

These finished faster than I expected! 2 oz meatballs, I should've been ready
