Cajun Ribs


 
I despise mesquite for anything except red meat, and then not really.
For pork I go cherry, apple, or even maple.
Mesquite is totally overpowering, I would strongly advise against it, but they're your ribs.
 
mesquite is great as long as you wait around 10-15 till the smoke is coming out blue for the top vent & oak is great with spares too
 
I always use one chunk each of apple , cherry and hickory. Seems to work really well for almost everything, I smoke, except for salmon.
 
I know it's almost heresy in my part of Texas to not use mesquite but I really don't favor it.
Oak, cherry, apple, hickory, pecan are what I have been using.
Oak has worked real well on ribs for me plus it's cheap since I get it out of the fire wood stack.
 
Really anything is good. I've tried lots of different woods and all make some great bbq. Just don't over do it. If your going for some spicy ribs and want something with a little more bite I'd go with hickory, pecan, or mesquite. I don't know why people give mesquite such a bad rap. Its really pretty darn good! I've had it on pork ribs several times and never regretted it. Good luck with how ever you do. Pix would be great too!
 
Best part about mesquite, is you buy one bag, and it lasts forever. lol I've had the same bag for like 15 years. But, that's because I hate it. :)

Apple wood for pork, add a little Hickory if you're feeling adventurous... :)
