I started with 1 lb of 80/20 chuck seasoned with 1 teaspoon each of black pepper and kosher salt. I split into 3 patties. I like to roll into a loose ball and smash with a burger press.

I like to sear them on each side for 2 minutes.

Offset with cheese until medium.

Served with some hash brown casserole.
