Brined and Barbecued Turkey with Pan Gravy for Christmas

For our Christmas dinner I did a Weber recipe from Weber’s Charcoal Grilling. The Art of Cooking with Live Fire book called Brined and Barbecued Turkey with Pan Gravy.
Brined the 15 pound bird for 24 hours with salt, rosemary, thyme, sage, black pepper and apple juice.
Cooked on the performer at 325-350 until it hit 160 at the breast used apple wood for the smoke.
We did this recipe a year ago for Thanksgiving and it was so good we did it again for this Christmas.

The pan gravy is just outstanding.

Barb cooked up a Costco spiral ham and a yam, some home made cranberry’s a little stuffing some Brussels sprouts and Barb’s homemade garlic rolls and we were good to go.
Everything turned out great.
