Birthday Dinner


 
Barb, you're spoiling the boy!!:D What a great looking dinner...and like everyone else said - that cheesecake...well, just "WOW"!!

This is the cheesecake recipe I did

Cherry Almond Cheesecake

1 cup ground almonds
1/3 cup graham cracker crumbs (about 6 squares)
¼ cup butter or margarine melted
3 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
3 eggs
1 can (21 ounces) cherry pie filling, divided

In a small bowl, combine almonds and cracker crumbs: stir in butter. Press onto the bottom of a greased 9-in. spring form pan: set aside. In a mixing bowl, beat the cream cheese and milk until smooth. Add eggs: beat on low just until combined. Pour into prepared crust. Refrigerate ½ cup pie filling for garnish. Drop remaining pie filling by teaspoon fulls onto cream cheese mixture: cut through batter with a knife to swirl the filling. Bake at 350 for 50-55 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Chill overnight. Remove sides of pan. Cut cheesecake into sl8ices; garnish with reserved pie filling. Refrigerate leftovers if you have any. Servings is 12

Great meal. I am particularly interested in the combination of cranberries and Brussels sprouts. It seems like the perfect complement to the bitterness of the greens.
 
Brussels Sprouts with Balsamic and Cranberries

Full recipe Serves 10-12 1/3 of the recipe for two people
3 pounds Brussels sprouts ¾ pound Brussels sprouts
½ cup olive oil 2 Tbsp. olive oil
1 cup sugar ¼ cup sugar
¾ cup balsamic vinegar 1 ½ Tbsp. balsamic vinegar
1 cup dried cranberries ¼ cup dried cranberries

Steam Brussels sprouts whole for three or four minutes. Then trim and cut them in half.
Combine the balsamic vinegar and sugar in a saucepan. Bring to a boil, then reduce the heat to medium-low and reduce until very thick.
Combine Brussel sprouts and a little oil together. Heat a CIS over indirect heat, add the sprouts and cook till nice and brown. Then add the sauce, cranberries and heat together.
Can be served over rice.
