"Best Spare Ribs I've Ever Had"

Cooked ribs to enjoy the NCAA Finals on Saturday night. I mean the important ones....NCAA Wrestling! Sure there's a few former wrestlers out there than enjoyed ESPNs coverage all weekend.

I rubbed them down with all classic stuff. S&P, garlic powder, onion powder, cayenne, paprika and went heavy on chili powder and dark chili powder. Set up my snake for 5-6 hours and apple wood for smoke. Ran at 275-300 the whole time, and I'm ok with that.

This is at the 3 hour mark. Foiled with brown sugar and butter.

Plated with roasted veggies (in the oven) and some brown rice. The bark was crispy and meat was moist. Smokey and Spicy from the chili powder but tangy and sweet meat. My wife loved them, and said they were definitely my best, and maybe the best ribs she's ever had. She asked what good prices are for ribs of different varieties, and told me to expect to find racks in the freezer whenever she spots them at a good price. Thank you so much for all the knowledge and experience shared on this site!!! I was walking around after dinner like I was 8 feet tall!

My 2 year old ate a whole rib, and pretended to be a dinosaur chomping on the bones!

Best part is, I know I can do even better. I had to foil them to rest, and they sat longer than expected and dried up just a little compared to when I pulled them...guess I gottat try again soon. Thanks for looking. Sorry this is rambling.
 
Awesome looking ribs with a nice smoke ring and great bark. Love the pic of your boy enjoying the ribs. Pretty soon he will be mastering dads rib recipe.
