Berkshire Pork Short Ribs

I got my hands on some very nice Kurobuta (aka "Berkshire") pork short ribs from Snake River Farms. It was definitely some of the best pork I've tasted in a long time, with a much more rich "porky" flavor than conventional supermarket pork. If you're ever presented with the opportunity to try Kurobuta pork, it's worth the occasional $$$ splurge.


Here are the uncooked short ribs, in and out of their Cryovac. These were seasoned with "Zero To Hero" BBQ rub by Pellet Envy.




This cook was done on the Performer using Basques Sugar Maple lump charcoal as the fuel and a couple chunks of apple wood for smoke. Total cook time was about 6 hours at 250°F.




Action shots. The bark came out with a deep mahogany color.




I took the meaty part of the short ribs off the bone and served as slices. Not to be left out, the juicy fatty meat from the rib section was just as incredible.





There was still heat remaining in the embers, so the family roasted marshmallows after dinner. Thanks for checking out the photos — I hope you all have a terrific week!

Hey Jerome. They short ribs look awesome. I have been thinking about splurging on some heritage breed pork, and after seeing your post I think I will try it! Thanks for the photos.
