Beer-Can Chicken

One of our favorites is Beer-can Chicken. Cooked up two in the WSM, direct. One is rubbed with Weber's Kickin Chicken, the other is rubbed using Steven Raichlen's Cajun Rub recipe

1/4 cup coarse salt (kosher or sea)
1/4 cup paprika
3 tablespoons freshly ground black pepper
1 tablespoon cayenne pepper, or to taste
1 tablespoon dried thyme
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon filé powder
2 teaspoons freshly ground white pepper
1 teaspoon ground bay leaf

Both rubs are family favorites, thus the need to do two birds

I had good skin until I carved them. So much juice that it ruined the crispy skin

If you haven't had Weber's Kickin Chicken, it's a must have, if you haven't made Steven's Cajun rub, it's also a must have / do
We had some interesting weather move in right at cook time. It was sunny and high 50's / low 60's and right as I was about to fire up the WSM....Hello Rain, Hail and Snow which is odd, since I'm basically sea level and it had been 60ish degrees only moments before

BC says very nice BCCs Chuck, but we need Lampe to give you plate loading up instructions! :p
I admit, my plated pictures are wimpy. That’s because usually when I’m carving, I’m eating, so by the time I’d done carving, I’m full and not much hits my plate. What I should do, is include my glass or my bottle of whatever I’m drinking…it’s never lacking :)
 
Nice looking birds Chuck, Haven't done BCC in a long time. Got five whole birds in the freezer and a fresh jar of Weber's Kickin Chicken which Barb and I use a lot, must be about time for some BCC. Of course as soon as the white stuff melts. Come on Summer!

I was amazed how much snow you had. I guess high country is snow no matter where you go (think I'll keep my retirement altitude 2.5K or less, elevation :)
 
Man, those chickens look great! Will try the Cajun rub one day soon.
Your comments regarding the excessive chicken juice makes me remember why I switched to hanging or splatchcocking them.
