Cured & hickory smoked a small Pork Belly (brown sugar & pepper blend).
Now I love a BLT, but wanted to make something a bit different.... like a beer battered bacon/cheese sammy.
Cut some bacon slices.
The line-up:
Fired up the performer... fried the bacon.
Putting it together.
Dipped both sides of the sandwich in the beer batter (1/4 cup flour, 3/4 cup pale ale, 1 egg, 1/4 tsp chipotle powder / whisked well) & onto a buttered skillet.
Flipped after a few minutes.
Gave it a few more minutes on the grill & it was time to eat!
Yum! Next time I'll use some thicker bread - something like Texas toast. & remember to put the egg in the batter.
