twice, before today, I visited Costco to purchase their AWESOME Prime Beef Short Ribs...
and both times, they were OUT (not including my trip there today). Yes, today, no short ribs...
THEY TOLD ME TODAY, THEY'LL HAVE THEM TOMORROW
so, Saturday morning, i stopped at our local Festival Foods grocer.
and they had these:
obviously, i bought them.
Then seasoned them with my version of Santa Maria Tri Tip Seasoning and 50/50 (equal weight amounts of S&P).
placed on the 26" Weber Kettle with a snake of coal burning at a nice steady 255ºF topped with hickory...
the photo below was taken after 3½ hrs... at that time,
i wrapped them in beautiful pink butcher paper and tossed them back on the kettle
...another 2 hours later, i removed the beef from the grates...
sliced up . . . . . . .
. . . . . and served.
They were good, very good.
But not as AWESOME as the Costco Prime Short Ribs.
