Finally got to try beef ribs on the WSM. Couldn't find plate short ribs so I did chuck short ribs.

Chuck ribs seasoned with salt and pepper

Great looking beef ribs Kevin. It's been way too long since we've had those. Meant to do them several times and then always cave and do pork baby backs or spares.

Looks real guud. Got some beef ribs waiting for me in the freezer. Have to do them real soon.
