Beef Back Ribs

Picked these up at Wegmans this week. After pulling the silver skin and trimming the fat found there was very little meat on the bones. picked up a small pack of beef short ribs to add

Dressed them with Worcestershire then black pepper, cumin, onion powder and some crushed red pepper

On the WSM, did a minion with what has become a favorite combo for me, Stubbs and Lump

Gave them a spray down with water and AJ mix every half hour or so, had to leave for about 45 minutes and came back to find the temp was still right on but the ribs were toothpick tender and done in 3.5 hours. The short ribs needed more time. I foiled them with the juice and prayed they would be OK

I was happy to find that though they weren't perfect they tasted great and were just a little dry. They did not last long

A nice baked tater and some bamboo steamed fresh beans finished off the plate

Some fresh pineapple with brown sugar and Vanilla Ice Cream finished off the meal

Looks like you did all right. I don't do beef ribs that often because it can be hard to tell exactly how much meat is on 'em. I like the looks of yours.
 
Looks like a mighty fine day at Bill's place. Some tasty looking food there! Wouldn't last very long at my house either
 
Bill my friend....I have been missing your great cooks, everything looks perfect. Next time I want to see some grill marks on the pineapple.
