Basic ribs

Got some ribs on sale.
So fired up the Performer to cook these up basic style. Added a few chunks of hickory wood mixed into the charcoals.
Homemade rub applied and smoked/cooked at about 250°.
Basted them at about 2 hour mark with a small amount of melted bacon fat.
I know, I know, way too healthy. Oh well.

At about 3.5 hours bend test indicated they were almost done.
Added a glaze of House Of Q Apple Butter sauce to the top side of the ribs only and left on the Performer for about another 30 minutes

Simple style basic ribs, no wrapping
These were really good, just not quite as moist as when they get the wrap treatment.
No complaints on that issue as these were devoured.

Our local Chilliwack corn is in season- triple sweet Jubilee corn. This is our favourite corn and was freshly picked, hard to beat.

My boss made a nice Caesar salad and did up some baked potatoes with chives from our garden.

Geez, no wonder my clothes seem to be shrinking. :cool:

Looks great!
Had to loosen my belt a notch just looking at that plate.
 
Thanks for the positive feedback.
With all the talented cooks on this site, I was trying to keep up.

The Apple Butter sauce is very dark, the pics with the sauce almost made the ribs look burnt.

That plate looks wonderful! I especially envy the corn. That is exactly the kind I like (didn't know the name, tho) but
all we can get around here is the bi-color corn.
