So for those of us who are, or have been involved in law Enforcement, the Shooting Sports and Hunting the names Skeeter Skelton and his son Bart go back many years as Lawmen, Authors and just great guys.
Anyhow, Bart posted a recipe a long time ago called Green Chili Stew which was a family favorite. Here is my version with the addition of mushrooms which I love in the dish.

Start with three Anaheim Chili's roasted, then peeled and then mostly seeded, I leave a bunch for some heat

Potatoes diced up, the peppers cut up and garlic diced

All right, the cut up Angus Chuck dredged in flour and on after the yellow onion has browned a little, meat browned then the rest of the items added

Half a beer and 1 cup of beef broth added, 1.5 tbsp of ground Cumin, Kosher to taste and shrooms added ( Sorry Bart)

Cliff I added about three tbsp of corn meal at the end to thicken it up slightly, just so you know. I like it a little thicker than Bart or Skeeter.

That looks great! You guys are killing me with all of these ideas for things I want to try ... but keep up the good work.
