I'd be on that like a dog on a bone!!! Looks perfect! I wish I could find reasonably priced skirt steak around here. One of my favorites!

That is a great looking board of beef there Chuck. What brand of knife is that, haven't seen one like that before? How well does if work?
 
Boil these first for 2-3 mins, then blanch them. Bring the CI skillet up to temp add olive oil, butter, salt pepper and lemon to finish...best way to enjoy these.
