Hello All,

We are off to a Thanksgiving get together with my wife's family. I just wanted to post a quick update to follow up on the bacon I have been working on. I made some back bacon and regular belly bacon a few weeks ago. I smoked them in the WhoDat mini using a mixture of apple and cherry pellets in my A-Maz-In tube smoker for about two hours and then finished with a snake to 150 internal. I then wrapped them in freezer paper and stored them in the deep freeze for about three weeks. Last Saturday, I partially thawed them and sliced in a meat slicer. The pics below show an example of the finished product I test cooked.

Sorry I didn't get a finished product pic. I wasn't fast enough...

The bacon had great flavor although I thought it was a bit over-smoked. My wife disagreed and said she liked the smokiness. Next time around I will add more black pepper to the rub. Thanks for looking...

Looks really good John, I gotta get my butt off the forum and start doing some of this great stuff I see on here!
 
Nice job. My family doesn't like as much pepper as I do so I like to pepper my bacon while it's cooking. We season other foods during the cook so why not?
 
That looks great. I'm gonna have to try smoking my own bacon sometime. I have one of those A-maz-in smoker boxes on my Christmas list.....we'll see :)
