salt pepper garlic onion and a bit of cayenne for seasoning...

strategically placed B&B in the 14" WSM with small applewood pieces...

placed the ribs on the WSM with a few jalapenos...

after one hour, i began spritzing the meat with an apple juice and apple cider vinegar concoction.
that went on for two hours...

after 3 total hours, i moved the ribs to a foil bath tray and covered for an additional 2 or more hours...


after a total of 6 hours, the meat temped at 203ºF then removed to rest...
soon afterwards, dinner was served.
Sautéed asparagus and pasta with a parmesan-butter-garlic sauce beside the short ribs.

the beef was good, not great.... the pasta was the show stopper!
tossed the beef recipe and kept the pasta recipe.
