Since we've had so little roasted poultry of late, I decided I should cook a chicken. Cavity got some S&P, the remaining rosemary and thyme from last week, some lemon and apple slices and finally, a splash of beer. I melted some butter, combined with chicken stock and a little more of said beer, along with some herbs and brushed the chicken with that concoction before putting it in the Weber Outdoor Oven. I basted with that same concoction 3 or 4 times during the cook. Finally, I tried a new recipe: Drunken Potatoes. A friend sent this on to me from the CampChef website recently and I figured this was a great opportunity to try it. It's a lot of potatoes for a family of 4, so I halved the recipe. Cooked it in a CI skillet and simply covered with foil for the 350 degree rest in the oven. Ad libbed a bit at the end and put them under the broiler for a minute or two to brown them up before throwing them in the serving dish and adding cheese. Good stuff, and definitely worth doing a gain.
