Ancho Cherry Baby Back Ribs with Root Beer Baked Beans

Decided on some baby backs last night, sided up with some Root Beer Baked Beans. Rounded things off with some left over Slaw from a few nights ago.

Got a couple of racks seasoned up with Simply Marvelous Cherry Rub.



Got them on my WSM, running at a steady 225. Cherry wood for smoke. This is going to be a 3-1-.5 cook.



After getting the ribs on, I made up my Ancho Cherry Sauce. Here are the ingredients. Forgot to show one ingredient, ketchup. It's in there too. Mixed everything up and simmered on stovetop for 30 minutes and then ran it through the food processer. The Ancho Peppers and the Tart Cherries are what really make this sauce pop.



A little bacon for the beans, followed by an onion cooked in the fat.





Here are the rest of the ingredients for the beans. I usually try and make my beans from scratch, but sometimes it's fun to take store bought and knock them up a notch or two.



Mixed 'er all up.



Into a baking dish.



Checked the ribs at the 3 hour mark. Coming along nicely.



Sauced the ribs with the Ancho Cherry Sauce.

In addition to the sauce, also added brown sugar, more of the cherry rub and some honey. Foiled both racks.



Put foiled racks back on smoker for one hour.



Got the beans going on some indirect heat for about an hour and a half.



After an hour removed the foil and sauces again with the Ancho Cherry Sauce.



Beans about done.



Pulled ribs after half hour.



Ready for slicing.

Everything came out great. We had quite a feast. Those beans were awesome. Thank you for looking everyone! Hope you all have a great weekend.

WOW!!!! Cliff that was one fantastic dinner, need to know when the next rib cook is so I can put my reservations in!!!!

Cliff, like Barb said WOW! The ribs look outstanding. One my favorite things to do is mess around with beans. I have to do mine from scratch or get the really low sodium canned beans. Your bean recipe intrigues me, would you mind sharing it I would love to try it.

Rich... Here's the recipe. Of course, I did it all on the grill and it came out fine. I upped the cook time to about an hour and a half as I doubt the kettle would have held 400 for an hour. Pretty cold last night too. Also, I did not use Pork & Beans, I used Bush's Baked Beans. I upped the bacon to around five slices. You may or may not want to do that with your sodium concerns. Good luck.

Root Beer Baked Beans

3 bacon slices
1 small onion, diced
2 (16-ounce) cans pork and beans
1/2 cup root beer (not diet)
1/4 cup hickory-smoked barbecue sauce
1/2 teaspoon dry mustard
1/8 teaspoon hot sauce

Preparation

Cook bacon in a skillet over medium heat until crisp; remove and drain on paper towels, reserving 2 tablespoons drippings in skillet. Crumble bacon.

Sauté diced onion in hot bacon drippings in skillet over high heat 5 minutes or until tender. Stir together onion, crumbled bacon, beans, and remaining ingredients in a lightly greased 1-quart baking dish.

Bake beans, uncovered, at 400° for 55 minutes or until sauce is thickened
 
Ancho and cherry sounds delicious. And looks even delicious-er. Pics confirm that - ribs and beans look fantastic.

Now that I make my own bacon I can control the sodium to some degree. Also using dried beans and making my own low sodium baked bean broth I can replicate pretty close to canned baked beans, but it's still being perfected.
It's funny we had some store bought bacon we wanted to use up (I used to allow myself one slice once in awhile) it was so salty I couldn't eat it. So I know my homemade has some sodium in it but no where near the store bought stuff.
 
Great looking meal Cliff. The ribs look perfect. Love the spicy sauce. And I really like that bean recipe. Going to have to give that a shot.
