I ended up with doing a Tony inspired cook, with carne asada. Those of you with a good eye for meat cuts will notice that it isn't a standard peace of meat for that. It is round roast of some kind, but it was the most sensible thing I found
Marinaded it in a orange/lime/beer mix which I found here on TVWBB, it was very nice and which will be used again. Fired up the performed, and did a reverse sear. Used apple wood for smoke flavor as I normally do
Carved it up in thin slices and had it in fajitas with refried pinto beans, cheese, salsa, avocado and green onions. Served with a lager from my local brewery Hansa
It was quite nice, even if probably not quite up to the Tony standard. Nice to try out new things that I've discover here
