One H@ll of a week at my house this week. But now that everything was done it was time to celebrate #3's 23rd Birthday. He requested a cook and I think I did him right. Picked up a 40 day aged Shell Steak from our Butcher as it is his favorite meal. Also picked up two nice fresh Red Snapper's for me and the CEO along with some fresh from Alaska overnight Oysters at $.99 each. This is how I did it.
First up horrydervies Poppers stuffed with cream cheese, grated cheese, and a sliver of sharp cheddar and wrapped in Prosciutto
Steak with kosher and fresh ground coming to room temp
Dry Pack Scallops with salt and pepper and the CI with EVOO and butter ready to go
Snapper scored lightly and the seasoning mix. Cumin Oregano Kosher Cilantro Chili Powder and two Tbsp EVOO and worked into the fish and left to marinate for about an hour
Oysters opened up and on ice
