tri tip on new years eve...

on the 26"otg weber kettle ... indirect and probed for a 118ºF internal temp

then direct to sear to a 128ºF temp

it's dam cold outside...

...and my beer was freezing....

once the desired temp was achieved, the beef was removed from the heat and rested....
then sliced after a 20 minute rest.

liz added some to her plate of Hasselback potatoes...

...and asparagus...

...and plopped a few slices on my plate as well...

then today, new years day.... I seasoned a rack of spares with blues hog rub

using the same grill from the night before, I added apple wood to the snake method using kingsford charcoal
these cooked about 3½ hours before I decided to foil them...

after about 45 minutes, I removed the foil, left the ribs on the grill then glazed the pork with blues hog bbq sauce...
a mix of both regular and Tennessee Red....

left on the grill ANOTHER 30 minutes before removing to rest 'round 15 minutes to slice and serve with ....
....skillet baked taters and sautéed carrots with roasted Brussels sprouts.

both meals were wonderful and most enjoyable...

The tri rip is cooked just the way we like it. But those ribs look delicious.

Both look outstanding Jim and what could be better than 8* and a ice cold beer while outside grilling, just doesn't get any better! Happy New year my friend!
 
Both those cooks looked BRRRRR fect Jim. I love the looks of the rib plate and those brussel sprouts look fabulous and the ring on the ribs, SPOT ON. Have a happy new year

WOW! Jim you out did yourself on both cooks. Liz, your hasselback potatoes are awesome and with the other veggies outstanding. You both are great together and Happy New Year my friends.

Those are two fantastic looking cooks. This is gonna sound weird to some....but those sides look just as good as the main course!
