3 inch tomahawk rib steak in the PBC

Yesterday we did a huge tomahawk steak in the PBC, Started on Saturday by seasoning it up and let it marinate overnight. Seasoned with tatonka dust, Cabella's Open Season all Purpose, garlic salt, fresh ground pepper and some Montreal steak. Yummy yum-yum!

Threw that bad boy right onto the Weber charcoal chimney for 3 mins or so on each side to sear in the juices.
Put the hooks into the bad boy and hung onto the rebar with care. Along with some hickory wood for flavor.
After a while the wife fixed up some fries in her new french fryer. It is a Actifry by T-fall. It uses as little as 1 TBSP of oil. No oil with frozen fries. And they come out great & a lot safer than having a open container of grease over a charcoal grill. Which is a disaster waiting to happen. This is safe and healthy way to do great fries.
A hour later @ 300 degree's on the cooker the steak reached 138. And was pulled off. Fries are ready too.
Sliced this bad boy open and look at that, pink perfection.
Onto the table and ready to eat some dinner.

Enough to feed the old grill goat & the war dept.With plenty leftover for tomorrow to make a few wraps.

I have to say, that is one of the most amazingly done thick cut steaks I've ever seen. I'm sure it was just as delicious as it looks.
 
I read the whole post and still can't believe you got that thing so perfect. I thought an hour would have been a disaster. Great job.
 
I'm with Paul, and almost everyone on this post..... Very impressed!

Did not think after an hour hanging there, it would look so perfect. That char on the outside looks like it has as much flavor as that perfect pink. Thanks for sharing.

ok yall know this beef man is gonna have to reply to this stream. DANG RUSS. great steak selection and the result looks like you could've "10'd" that slab. I think you might need bigger rebar on that pit mod. hehe. outstanding tomahawk chief.
