1st try of pork steaks!

So I first did a search on here on how to cook these bad boys....you guys are the best!



Fired up the OTG with a mix of KBB and Cowboy Lump...banked all the coals to one side and had all vents wide open. Threw on a couple small chunks of hickory and cooked indirect for 30 minutes. Barely even seasoned them....threw a little pepper and salt on 'em but that's it.



After 30 minutes threw them directly over the coals for a couple minutes each side. Threw them into a bath of watered down Sweet Baby Ray's (foiled the top of pie plate) for about an hour. Threw them back over the coals to tighten up the sauce a bit. These were great! Fat rendered completely out for the most part and wife just loved 'em!! Here's the final shot!

Nice color on the pork steaks. I discovered porks steaks thanks to this site and Jim Lampe.
