Yeah, I'll go with that for now.
Most agree that removing the membrane makes for a better eating rib, but it's labor-intensive, so butchers will sometimes score the membrane as an in-between approach that hopes to achieve the same effect. I don't think it does.Why do some butchers score/slice the membrane on ribs???
