I marinated my last tri-tip in teriyaki and habanero sauce since ~8:30am, put it on the grill around 5:30pm.
before the first turn @ 10 min:
ouch! - I closed the top vent halfway to control the heat. I only had a single zone charcoal layout------normally I pile it up in the side so this was something new.
a lil overdone but o'well

White rice w/ spog thrown in at the beginning (worked as good as I expected)
I used a some mesquite chips for the smoke flavor. Flavor was delicious, but I'd have preferred a ribeye for the tenderness for this anyway.
