11.5 lb. brisket from Costco.
Fat trimmings rendered for my birds.
Brooke the lab and I had a couple of the crispy pieces, could have eaten them all, but common sense stepped in.
I mixed in some peanut butter and shelled sunflower seeds.
On to the cook. Flat section cut from the packer, SYD rub, lump for fuel, pecan wood for smoke. Wrapped in butcher paper at 165, rested in a warm cooler for 1 hour, total cook time 7 hour.
Edit: to be clear, the packer was cut about in half, the rest of the flat, along with the point, will be for another cook.
No plate shots, sides were coleslaw and baked beans.
Not a perfect brisket, but tender, moist, and has great flavor, can't ask for much more.
This morning's breakfast, the butter toasted Hawaiian rolls put this thing over the top.
He won't be coming to my birdfeeders, but a fly over the other day gave me another one to add to my backyard bird list.
