Did those a while back...
Always wanted to make them after I read about them on a Steven Raichlen blog.

Peeled onions and cut them in half lengthwise. Then divided in pieces (keeping the 2 pieces of the same layer together) and filled them with my spice ground meat mix

Then they got wrapped in bacon (shoulder bacon in this case)

And on the 14.5" WSM they went (no waterpan, no drippan)

After about 1 hour

It was a lot less work than I initially thought, and they were very tasty:cool:
I will definitely make them again.
Only thing I will do different is: use smaller onions and double up on the onion layers to get that sweet onion flavour coming through even better!
 
Those look delicious. This has given me some good ideas.

Will definitely try something similar this weekend.

With the leftover onion pieces I can make a Vidalia Onion Pie.
 
That looks awesome Anne. Going to have to give that a try because I love onions and with the meat inside then wrapped in bacon. You sure can't go wrong with that.
