Hope everyone is having a great weekend. Did a ton of yardwork in the front, but go a long waze to go. It died last year in the drought.

Looks like a good way to grill on the WSM as you got a nice sear. I would like to know about the lid as well.
 
Looks good to me, TT is one of our favorites. Like the video, that's one roaring inferno you got going there.
 
I saw that you had a couple of questions about lid on or off but heck!! It looks like you have created a new innovative method of cooking on the WSM!! I'd like a detailed explanation of this method from type of charcoal to wood to lid usage. I've seen you use this method on other cooks and it has intrigued me. This style of using a WSM this way derseves a name like the names for using charcoal such as "snake method " or "Minion method " Perhaps we can call it the "Chucko Afterburner Method " Please elaborate on what you do and how you do it.
 
I bought a cord of white oak a couple years back, the original plan was to use it making pizza (on the WSM) All I do is take the door off, take out charcoal ring so that all there's left is the charcoal grate and the two cooking grates. I just get about a half dozen charcoals fully lit and dump them in the center of the charcoal grate and then I throw on a piece or two of the Oak. Takes sometimes five minutes for the Oak to burst into flame, but once it does, it's show time. When I use the kettle pizza attachment, it says I'm at 700+ degrees. I like cooking over fire, and at present this is my only method to do so. It is hard on the WSM, the bottom vents are not in good shape and I really need to replace the cooking grates. But hey...I'm having a good time
