Turkey seems to be cooking fast

Mine ended up being pretty good. Only thing was the skin wasn't perfect, but the meat itself was really good. I took it off after about 5 hours and let it rest for an hour, then lightly covered with tin foil. Cut it at around 1, and it was still hot. Everyone raved about it.

Turkey seems to be cooking fast

Put it on at 6, and just went to put the Maverick thermometer in and it was already showing around 135 in one part of the breast. Been trying to keep temps around 325 since it is a 21lb bird. Was hoping it was going to cook slower since we aren't supposed to eat until 2.

Do you put the bird in a pan to smoke?

Last year was the first time I'd smoked a turkey....came out great. I just put it on the top grate of my WSM 18.5 and then put a pan under it on the second grate. This year the wife bought a 21lb turkey which looks like it will still fit on the the top grate but wondering if I should put it in...

    My first smoked turkey

It came out way better than I thought it would. Father in law who has smoked some before, said it was the best he's ever had. Just put onion and apples in cavity. Olive oil over bird, and sprinkled kosher salt/pepper and a little garlic salt all over bird. Put it on the 18.5 at around 6am...

Only my 3rd smoke on 18.5 WSM - Pork Butt

Had the in laws coming into town yesterday evening to help watch our 3 month old daughter, so figured I'd throw on a pork butt and see how it would come out. For my smoke I followed the Franklin BBQ method for his pork butt. I went to the local Kroger and picked up a 10lb pork butt. For the...

2nd smoke on 18.5 WSM - Quarter chickens

Second weekend.....second smoke. Had my sister, brother in law, and two nephews coming to the house to see our 2 month old, so figured I'd smoke some chickens. When my dad was alive, he used to always smoke chickens on his brinkman electric smoker and they always came out great. So I was...

First smoke on my 18.5 - baby back ribs

Let me first preface this by saying, this is the first thing I've tried to smoke in over 10 years, the last thing being ribs on a gas grill using just a small wood chip box. Few things I learned on first smoke: - Use more charcoal in chimney starter. Only used about 40 kingsford briquets and...

    Cooking grates peeling?

Just called Weber customer service. They couldn't tell me anything, and basically said I needed to buy some new ones. I did double check when I got home, I was thinking maybe it was pieces of foil, but no, it was the actual grate peeling. Guess I'll have to go get a couple new ones.

    Cooking grates peeling?

I just bought an 18.5 off craigslist this week, and was looking at it again last night and noticed that on the cooking grates, they seemed to be peeling some? Have any of you experienced this? Is it normal? This cooker has only been used probably 2 or 3 times....looks like new.

Mod to hold Maverick thermometer on WSM

Have any of you made something to hold the Maverick thermom to the WSM? I'm about to order one for the WSM I just got, and was thinking of some sort of magnet on the back of it, but would probably get to hot. Or do yall just lay it on the ground?

About to bite the bullet - deal on 18.5 WSM

Picked it up....thing is in awesome shape! It has been used just a couple of times....can't wait to get it going this weekend! Now to decide what to cook first. The only thing he had done was drill a small hole for a Maverick thermometer, so I guess I'll be ordering one of those.
