I am going to have a cook this weekend and would like to hear about what people have done when cooking brisket and a butt. Does it matter what I put on top? Thanks for the help.

Or you can do as I do and use the BBQ Guru and start with 6-8 briquets. Put the meat on and just waite for some great BBQ.

you need to take it off and get it into some foil. Let it cook the rest of the time wraped.

On a Butt I dont do anything to it as far as cutting fat or skin. Rub it down and let sit for 30 to 60 min as I start the fire. It has come out good for me.

I wouldnt let that stop me from doing a brisket. Use what ever you can find at the time. It is cheaper for me to do a whole one over a flat but I can get them here at anytime.

I have had one for 2 years or so. Have cooked 3 whole hogs as we have plenty of hogs here in FLA. When it isnt deer season, hogs are going to be the next best thing to hunt for. It works like it says and turns out great but would still like some smoke flavor. You need to season the hog well...

So if I am understanding correct, if I already plan on using the GURU (I already have one with the 10 cfm fan) I wont need to use water in the pan? Or should I use some foil in the pan if I plan not to use water? Or should i just use water in the pan along with the GURU and just see how it goes.

I have seen some talk on the water pan.Didnt really pay that much to it as at the time I didnt have one(A WSM that is). Seeing how some was water in the pan and some do not. I do not use a water pan in the pit I have now but wanted to see what the people that have had there WSM's for some time...
