    Technivorm Moccamaster KB741 Coffee Brewer

I know some of you are aware of this highly rated, but expensive coffee brewer. I think they are $299-$309 retail. Type in "Moccamaster KB 741" into Google and/or Youtube and you'll get an idea. This is the one with the glass carafe and two switches (power and higher warming temp on/off). I've...

    Yellow Rice

Any one have a recipe for yellow rice? The prepackaged stuff isn't very good, imo. Thanks. Richard

Beef Jerky Questions - the Kevin Taylor recipe in Beef Section

In the Beef Section, there is a post about Beef Jerky on the WSM started by Stogie (Kevin Taylor). I have two questions about that beef jerky. 1. TenderQuik (TQ) is used in that recipe but he does not mention rinsing the meat after removing it from the TQ solution. I do rinse pork bellies after...

    Waffle Iron

Just thought I'd post about our new waffle maker - a vintage Sunbeam CG waffle maker and grill - that we got from toastercentral.com. What a handsome chrome appliance - with a mirror-like finish. The 9" square waffle is divided into quarters which fit the toaster just fine when you have...

    Sweet Pickled Jalaplenos?

On a recent trip to Nora Mill (outside Helen, GA), I sampled some sweet pickled jalapenos. Very tasty - would be great on a hamburger. Any idea how to make 'em? Most of the pickled jalapenos that I've had (& made) are more vinegary and have an olive green appearance. These were a little crisp...

    Recommend A Good Toaster

My toaster is destined for the garbage can. With the darkest setting at 6, it takes 2 cycles to make toast "toast" dark enough. Can you recommend a good, 2 slice toaster? Thanks. Richard

    Morton Sugar Cure

I use Morton Tender Quick when making bacon. Recently on a trip I found a 7.5 lb. bag of Morton Sugar Cure which I have not opened, but it appears to be the same product except it has a packet of spices that are to be mixed with the cure (1.25 tsp spice/1 cup of cure). Have you used the Morton...

    Canadian Bacon

So little discussion on the Pork Front, let me opine about that noble creature, the pig. Was a time I could purchase pork bellies from a local grocer, but those days are gone unless I purchase an entire case! My family is clamoring for more homemade bacon, and what can I do? You got it...

    Kansas City BBQ Sauces (retail)

For Christmas I was given a selection of BBQ sauces from Kansas City. They are each in 18 oz bottles. They are: Gates (original classic) Arthur Bryant's Hayward's Pit Only one I've tried (with WSM Boston Butt) is the Hayward's. Pretty good. Slight bit of heat to it. Have you had these sauces...

    Santa Fe Cured Pork Loin

There's a recipe at the Big Green Egg site for Santa Fe Cured Pork Loin that is very good. You wet cure the pork loin (not the tenderloin) for 3 days. I got an 8 pounder, I think, and cut it in half. I tried this recipe and cooked it last night. Really excellent! Santa Fe Cured Pork Loin Richard

    More Bacon Makin' w/photos

Josh, as I said in an earlier post (this thread is spread around on this forum, so I guess I'll pick it up here), you inspired me to make bacon. I followed your method, (Josh's earlier post) and recipe for the Maple and Garlic Cured and did two others - Sichuan Surprise and Chorizon. Yesterday I...

    Peruvian Pepper Paste

I got a small jar of Peruvian pepper paste at El Bodegon on Military Trail at Forest Hill (?) in South Florida. The label reads: Andino's Food Yellow Hot Peppers Paste Aji Amarillo para Ceviche (product of Peru, distributed by Goya Food) Ingredients: aji amarillo, salt, citric acid. It isn't...

WSM and a E-Z Que Cradle!

It's been quite a while since I've posted here (KK where are my peppers, ?) but I figured this requires a posting. As you know, the E-Z Que Cradle (the excellent rotisserie) can be used with several Weber products (gas grills, Kettle), but not the WSM. I spoke with John, the owner of E-Z Que...

Chinese Chicken Soup - Using Leftovers from WSM

With coals left on my WSM Sunday after a LONG chipotle marathon, I did a beer-butt chicken (used a can of pineapple juice) and couple of lbs of country sausage with a plan to have my wife make gumbo. The gumbo is happening tomorrow, but I got hungry for the chicken/sausage today. I wanted...

    Apricot Chipotle BBQ Sauce

Months back, Keri C. posted Paul Kirk's Raspberry Chipotle BBQ Sauce recipe. As some of you know, it really is a good sauce. I've had it on brisket, pulled pork, and hamburgers. Mmmmmm. Everyone I've served it to really liked it. Well, I wondered how it would be substituting apricot preserves...

    Chipocludos

I used some of the chipotles I recently made on the WSM to make Chipocludos: Smoked Chile Conserves. See Chipocludos See full details at that link, but here are the basics. 10 dried chipotle chiles 10 dried morita chiles (if unavailable, use all chipotles) 4 whole heads garlic 1-1/2 large white...
