So little discussion on the Pork Front, let me opine about that noble creature, the pig.

Was a time I could purchase pork bellies from a local grocer, but those days are gone unless I purchase an entire case! My family is clamoring for more homemade bacon, and what can I do? You got it, Canadian Bacon. I got a pack of pork tenderloins at S**ms C**b which contains 4 tenderloins.

In the refrigerator curing in 3 mixtures are:
1. maple syrup, brown sugar
2. garlic and lots of ground pepper
3. Jamaican jerk powder from Fresh Market.
Morton Tender Quik in all of the cures.

Will smoke them this Saturday. Looking forward to trying these. Have you done them?

Antique food, you gotta love it.
