    That's a good idea, cleaning the grates on the gas grill. Last time I smoked, I was in a rush to cover the WSM, we had houseguests and a rain storm. Then I forgot about it for a few months.

    The grates had some fuzzy mold, and I also forgot to clean the water pan. That smelled awful! I ended up handwashing everything. And this time I promise myself I'll do better with cleanup!

    Had the day off from work and decided to smoke. I really wish I had done a better job cleaning the WSM after my last smoke, around Thanksgiving. But I'm ready to start the chimney, I think.

    So it's over, we've eaten and cleared the table. Everything came out fine. One of the tiny brisket pieces sliced up beautifully, the other shattered. The turkey was wonderful, the ribs were good but a bit salty. Thanks for all the suggestions.

    The replacement coals are lit and temp is fine, but I'm getting tempted to move everything indoors to the regular oven. My nice sunny day suddenly turned into heavy rain. And I'm hungry!
