Random Tuesday smoking

Had the day off from work and decided to smoke.

I really wish I had done a better job cleaning the WSM after my last smoke, around Thanksgiving. But I'm ready to start the chimney, I think.

It's just the grates right? A little oven cleaner (grates are cold) and a few minutes should do nicely.

The grates had some fuzzy mold, and I also forgot to clean the water pan. That smelled awful! I ended up handwashing everything. And this time I promise myself I'll do better with cleanup!

Momo, i've gotten into the habit of cleaning out the dead coals and ash after it cools, and foiling the water pan WITHOUT water makes ez clean-up.
My WSM is ready to go for each cook (with the expection of having to change the foil sometimes on the waterpan).
If you have a gas grill, place your cooking grate inside it and fire it up on high to burn away anything you think is undesirable.

That's a good idea, cleaning the grates on the gas grill.

Last time I smoked, I was in a rush to cover the WSM, we had houseguests and a rain storm. Then I forgot about it for a few months.
