    brisket question

It is almost surreal reading your post. I had the almost same cook! Except due to time constraints I had to foil the last three hours. Got mine from Costco, was 15lbs untrimmed, probably a little over 11 trimmed. It was fat side up for 8 hours. Then foiled to make it on time before I left the...

    Need a Goose Recipe!

Hey guys, After my hand at Duck (came out great), I wanted to try to cook a goose this week. My beautiful wife bought a 10lb free range young domestic goose (frozen) from the supermarket. Going to thaw today and put it on the Kettle tomorrow. How do you guys prepare / cook the goose? What temp...

Cornish game hens on the Weber!

Thanks, everyone! They are inexpensive this time of year, I picked up 2 for $5 frozen. I marinaded them in a mixture of: * Olive Oil * Lemon Juice * Ground Cumin * Ground Coriander * Red Pepper Flakes * Onion Powder (normally would have used real onion, but was pressed for time) * Garlic Powder...

Cornish game hens on the Weber!

Marinated these for 24 hours and then threw them on the grill, cooked indirectly (~370 degrees) and then finished over the coals to try and crisp the skin a little. Very tasty. The first time my kids had cornish game hens, and they all are clamoring for more. Easy to make, inexpensive, different...

    Ducks on the grill?

    Duck on the Kettle

Hi Chris! I mostly followed this recipe here: http://www.yummly.com/recipe/external/Five-Spice-Duck-Food-Network-289330 I only took the kettle up to 430 rather than the 500 it calls for (I didn't light enough coals for the 2 ducks). I also didn't end up cooking it for the entire 50 minutes @350...

    Duck on the Kettle

Never cooked Duck before, and certainly never on the Kettle. I had posted a question about it in the grilling forum. Well, I put together a simple five-spice rub, coated the birds and threw them on the kettle. I think the rub had a bit too much sugar in it for the high temps that I was using...

    fast and easy turkey

That's great! I am finding as well that simpler is better. I did the salted turkey as per this site's instructions for Thanksgiving, and man - what less of a hassle than the brined bird. And tasty skin to boot. I won't be doing a brined turkey again! My friend just rubbed his 22.5lb bird down...

    Ducks on the grill?

Hi all! I bought two ducks that are defrosting in my fridge right now. Any great recipes that you guys have found good on the grill? I was planning on grilling them tomorrow probably. Also, if anyone has goose recipes, I see some that might be on sale soon at my grocery store :) Thanks!

Another successful Thanksgiving Turkey thanks to this board!

First year to salt a turkey, pretty much as spec'd out in the cooking topics page that Chris had put together. It was the BEST turkey I had ever made. I definitely will be doing it again! It came out very tasty, I could almost eat Turkey for more than Thanksgiving! The dark meat was wonderful in...

Some choices for a Butt Rub?

On the Cooking Topics page, you will find a recipe for mustard slathered butts which also has a pretty good rub recipe in there. We use that one all the time with some slight modifications. In fact, have a couple of butts resting right now made that way

Pork butt on Weber grill, is it ok?

I have done pork shoulder (the picnic actually, not the butt) on my 22.5" Kettle -- pre WSM. Turned out pretty good, but not as good as the ones I've done on the WSM. But pretty good nontheless! As Jason and Steve mentioned -- it's hard to go lower than 300 degrees in a Kettle. Or at least I...

    Roadside Chicken

Bryan -- thanks for the suggestions about using the WSM. I am toying with taking the kettle along (my parents have a ginormous stainless steel outdoor grill that I absolutely despise cooking on). Sounds like the kettle really is the way to go for this recipe. My what large tongs you have...

    Roadside Chicken

Has anyone here done this on the WSM? If so, can you give any sort of tricks or tips regarding it? I want to do halves on Christmas day at my folks' home, and I am already taking my cooker up there, and don't want to lug around the grill as well I am assuming no water pan, a small chunk of...

    WSM for Christmas!

Awesome Dave! I agree with Paul, having had an Electric Smoker before -- the WSM is night and day. Once you learn how the unit reacts to vent control and fuel/meat levels it is a snap, and you may just find yourself hauling it up to your camp Enjoy!

Berkshire Cured Bacon, Hock, and Ham w/Picture links

Josh - same here. When I was looking for a spouse, vegetarianism was on the 'deal breaker' list as well. I grew up in a family that didn't eat meat on Fridays, and let me tell you -- Fridays were my least favorite day of the week! I am a carnivore through and through. Fortunately my wife and...
