    Roadside chicken marinade

    My longest Roadside chicken marinade is 23hrs, with oil. It was absolutely fantastic and a whole lot better than an 8 hr marinade.

    Dark & Stormy: Rum + ginger beer

    This weekend I added a new drink to my BBQ drink rotation. It is a "dark and stormy". Its made with 1 part Gosslings black rum, 4 parts ginger beer and a lime wedge. Real easy to drink and to make. Makes for a good summery refreshing drink.

    Well after the holiday cookathon is anyone smoken ?

    I am planning on doing 6 racks of St Louis and about 10lbs of chicken wings. I think I might be the only person on this forum who didnt do any smoking over the fourth. I actually let someone else do the cooking during the holiday weekend. I smoked and grilled a bunch the weekend before.

    Roadside Chicken

    I can't believe I waited this long to try this recipe, but this weekend I am happy I did. I made a couple of changes, I added 1 tbl of ancho pepper and 1.5 tbl of cayenne pepper to give a little more zip. I marinated 6 chix breast for 18 hours before grilling. Outstanding!

    Overnight cook question

    A BBQ Guru works fantastic for overnighters. It will stabilize the temps in about 30 minutes and then you can catch some zzzzzzzz's. You can then sleep through the whole night without any worries.

    Good morning all, I awoke bright and early today thinking about my new 22" WSM. I won it last sunday in a raffle and havent had a chance to fire it up yet. Well that is all about to change today. I am thinking of throwing on 13 lbs of Butt tonight and doing a nice "low-n-slow" overnight...

    Smoked Salmon...Mmm, Mmm, Good

    Salmon is on my list of things to smoke next. Last night I did some grilled and some blackened sea bass. Both came out great. My girlfriend has given up completely on cooking. Which is a good thing...she wasnt that good to begin with.

    Still not smoking *****

    For 21 years I was a two pack a day smoker. Got a prescription for Chantix from my doctor. Last smoke was September 22 2008. It was a breeze with the Chantix.
