    Dr. BBQ

You guys must not live on the Upper East Side of Manhattan! The Greenbrier starts in June with me and Chris Lilly, Then me and Myron Mixon and finally Chris and Myron. It's called BBQ Mastery. Just google that if you're interested. But if you are bothered by the $10.95 sandwich you probably...

    Dr. BBQ

Hi Gary, My stuff will continue to live in Lakeland and I'll still get my mail here. But I'm not here much anyway and now it'll just be a little less. New York is fun but I'm not ready for full time yet.

    Your favorite meal?

OK, then what's your favorite meal if I'm cooking! Thanks for the nice words, the feeling is mutual. I won't be in Memphis this year but I suspect I'll see you in Chicago at the IACP conference.

    Your favorite meal?

Welcome Jamie. Good to see you hanging around the net with us. If you were cooking dinner for yourself over a charcoal fire, what would the menu be?

Live Report: Hearth, Patio, & BBQ Expo, Reno NV

Nice report Chris. It was good to see you. You hit my feelings about another Q&A right on the head. What I read into the Weber guy's comments is that there is no rush to get in on the fad of smoking. If they are that methodical about the future of the WSM in any configuration they must think...

My first new Kingsford burn test

Hi Chris, I recently met some Kingsford reps and they made reference to the new stuff being ready to cook sooner and if you don't recognize that your fire could seem like it doesn't last as long. I thought that was an interesting point. They are high on the stuff, but I'm not sure their goals...

    The book

Hi Lolis, I have a first edition of Smokestack Lightning, bought long before it was a collectors item. I really enjoyed it. I'm a big fan of all the things about BBQ that aren't actually food, and you clearly are also. Here's my queston, got an extra dust jacket to replace my lost one? Thanks...

    Brisket - Anyone inject?

Thanks for the nice words Rita. This recipe is for broth made with Knorr cubes. I find them to be pretty good. I try not to make my recipes too high brow, and most people just don't actually make home made stock. BTW, if you do, you'll probably need to add some salt.

    Brisket - Anyone inject?

Wow! I didn't know I'd made the Wisconsin Rapids Tribune. Here's the recipe. Big Cow Beef Injection 2 cups beef broth 1/4 cup Worcestershire sauce 1 teaspoon onion powder 1 teaspoon garlic powder 1/2 teaspoon cayenne pepper Combine all ingredients in a bowl, mix well and refrigerate before...

Good book for a new smoker?

I'm always surprised to see people recommend that book, while saying that the times and temps are off. With all due respect to the Jamesons, aren't the times and temps really important? Like the MOST IMPORTANT thing when learning to cook BBQ?

Good book for a new smoker?

You can cook at the park too, then you don't need to actually buy a grill. I'd recomend the first author to ever do a Q&A on TVWB.

    First Cook with Mesquite

It's really strong and really distinct. You run the risk of ruining dinner if you try it because many people just don't like it. Be sure the guests are open minded, and that they understand that it's an experiment if you try it.
