    I haven't BBQ with Justin Wilson, but I did attend a "Cochon de lait" at his home in Louisiana in 1976. Quite a show. Senators, LSU football coaches & suspected mafiosos in attendance.

    Finished a chuck roll today

    Did a 15 pounder over the weekend. Started at 11:30pm (after the ND game). Took it off @ 3:30 and foiled in the oven for 45 minutes. Turned out excellent. Very good cut of meat to smoke.

    Royal Oak Plus Briquettes

    I put the two chuck roasts on at 8:15pm stayed at 220 at last check 1:15am, at 6:30am temp was 180. checked the coals at they were about all ash put another lit chimney in to finish.

    I just bought 40 lbs of royal oak premium at wallyworld for $5. Looks like I need to go back and get some more. I'm smoking two chuck roasts ( 7.5lber & a 6.0 lber).

    I used this method to cook 15 lb or so yesterday. 10 lb of dark qtrs the rest split breasts. Turned out wonderful

    Butts turned out great, but I ranout of fuel after 18 hours.

    I put two butts on at 6pm (mustard & rub), shooting for 2pm takeoff and smoking some fresh brats and the end. temp 230 & holding.
