father's day smoke

fiancee askled me to smoke a brisket for her family for father's day celebration tomorrow. got a ten pounder that has been marinatin since yesterday. have my chimney starter going and am about to begin my 15 hour voyage (12 in smoker 3 in cooler).
 
I put two butts on at 6pm (mustard & rub), shooting for 2pm takeoff and smoking some fresh brats and the end. temp 230 & holding.
 
Will rub spares at 6 a.m. for lunch at 1. Will foil when I get back from church approximately 11:30 and pull out of foil at 12:30. Yeah, I know that 6 1/2 hours might be a little short for spares, but, sometimes you have to adapt.

If you can, allow a little time on the pit out of the foil at the end. It really helps in firming up the ribs. Unless you like them almost falling off the bone, I would go 45 min. at 11:30 and then 1/2 hr out of foil. The total time is more than enough for spares when you utilize foil.
